Strawberry & Elderflower Creams

a simple but delicious summer recipe

Being blessed with a fine Elderberry tree right outside my apartment it seems only natural to utilise the seasonal flowers and make a batch of Elderflower cordial. With three large bottles of the stuff in the fridge I have to find a use for it outside of adding it to a gin and tonic! This recipe, from Sophie Grigson’s Country Kitchen, seemed ideal combining the Elderflower cordial with that other spring/summer staple, strawberries.

Of course if the results of your homemade Elderflower cordial are, how can we say, perhaps less than palatable you can throw a few glugs of a ready-made version; Belvoir make a fine version.

I’ve served these Strawberry and Elderflower Creams in cocktail glasses, you can often find these in charity shops for little more than a pound. Decorate with strawberries on a cocktail skewer and a light dusting of icing sugar.

Combining the heady fragrance of Elderflower with delicious English strawberries and cream

Ingredients
  1. 500g hulled strawberries
  2. 3 tablespoons Elderflower Cordial
  3. 85g caster sugar
  4. 4 gelatine leaves
  5. 300ml whipping cream
  6. 2 strips lemon zest
Instructions
  1. Select a few strawberries for decoration and process the others with the cordial and sugar.
  2. Soak the gelatine in a dish of cold water, leave to soak while heating the cream. Add the lemon zest to the cream and heat slowly and bring to the boil.
  3. Remove from the heat. Add the gelatine (squeeze out the excess water) and stir to dissolve.
  4. Cool until warm. remove the zest then mix in the strawberry puree. Spoon into glasses and leave to set in the fridge for 3-4 hours.
  5. Bring back to room temperature before serving.

    So was it ideal or did it just seem to be ideal 🙂
    We won’t get proper Estonian strawberries until later this month, so I must wait a little longer. But I’ve got some good Swedish elderflower cordial waiting..

    Oh, is it really such a bad thing if you never get beyond using it in G&Ts??! :o) These creams do sound delicious though & I love the photo…
