Spaghetti with Courgettes Feta and Lemon

Greek Flavours perfect with New Style Retsina

Following a fantastic visit an attempt to encapsulate the flavours of Greece – feta cheese, fresh herbs, courgettes and lemon. This little beaut of a dish, Spaghetti with Courgettes Feta and Lemon, should fulfil the ambition.

While any of the modern styles of Greek white wine should accompany this dish well (Assyrtiko, Roditis, Malagouzia either as single varietals of blended together or with Sauvignon Blanc for example) a perfect paring was found in a new style Retsina, the evocatively named Kechris Tear of the Pine Retsina, another joyous discovery during the recent wine tour.

Serves 1
combining the fresh flavours of Greece and perfect with a Greek dry white wine.

Ingredients
  1. 100 g dried spaghetti
  2. 2 slices of feta cheese crumbled
  3. Glug of olive oil
  4. Grated lemon rind to taste
  5. Half a raw courgette sliced thinly
  6. Juice of half a lemon
  7. Small handful of fresh mint leaves
Instructions
  1. cook pasta of choice as per packet instructions
  2. combine all the ingredients and gently stir through the cooked pasta
