Recipe: Beer Braised Chicken Tacos

Using readily available Old El Paso products

I feel no shame in using ready made products; it may cause offence to some, especially blogging a recipe using them (oh the furore witnessed over the Betty Crocker creations!). But show me someone who has the time to make their own taco shells or tortillas! Mid-week in this house? It aint going to happen especially when all that is needed is something on the plate damn quick. If they are good enough for Jamie Oliver, then the Old El Paso Taco shells are good enough for me too. Add in a packet of their spice mix, a jar of Peppers and a squeezy bottle of sauce then you would be just plain crazy not to ‘have a go’ at making something. So here it is – Old El Paso Beer Braised Chicken Tacos.

The recipe says use a Mexican beer. I used Sol simply because it was easiest to get hold of but frankly any lager would do. They pretty much all taste the same, afterall.

They were good too, very successful and refreshing to have a taco that didn’t contain minced beef!

Ingredients
  1. vegetable oil
  2. 1 large onion finely chopped
  3. 450g sliced chicken breasts
  4. 2 tsp Old El Paso Smoky BBQ Fajita Seasoning Mix
  5. 250ml Mexican Beer (ie SOL)
  6. 1 tsp Cumin
  7. 1 tsp Chilli Powder
  8. 1 jar Old El Paso Thick n' Chunky Mild Salsa
  9. 12 Old El Paso Taco Shells
  10. 1 jar Old El Paso Sliced Jalapenos
  11. Squirt Old El Paso Cool Soured Cream Topping
  12. Fresh Coriander
  13. Lime wedges
Instructions
  1. Set Oven to 180C to heat through the taco shells
  2. In a frying pan, heat oil over a medium heat
  3. Fry the onion until soft, add the chicken pieces and sprinkle over the BBQ Seasoning mix
  4. Pour over the beer, add the chilli powder, cumin and salsa
  5. Heat to a simmer then cook uncovered for about 20 minutes (until the chicken is cooked through)
  6. Heat through the taco shells as per the pack instructions
  7. Spoon the chicken mix into each shell, top with jalapenos, sour cream and coriander
  8. Serve with lime wedges on the side
