Orange Syrup Cakes

The recipe here, ostensibly for little Orange Syrup Cakes, makes for fine muffins too. While I’m sure that everyone and their mother has a ‘tried and tested’ recipe I rather enjoy the results from this version – especially as a little dribble of marmalade inside each cake or muffin adds a little step-up from the norm. Add a dollop of cream and these cakes become a full-on dessert.

Ingredients

For The Cakes/Muffins

  • 375 g Self-Raising Flour
  • 180 g Golden Caster Sugar
  • 100 ml Thick Greek Yoghurt
  • 6 tbsp Semi-Skimmed Milk
  • 2 whole Oranges grated zest and juice
  • 100 g Unsalted Butter melted and cooled
  • 2 tsp Orange Marmalade
  • walnuts for decoration

For the Syrup

  • 2 whole Oranges grated and zest
  • 110 g Golden Caster Sugar
  • 2 tsp Orange Marmalade
  • 3 drops Orange Blossom Water

Instructions

For The Muffins

  1. Sieve the flour over the sugar.

  2. Combine the other ingredients in a seperate bowl and mix well. Lightly combine inot the flour/sugar mix.

  3. Place a layer of the mix in the bottom of the tin. Place a small amount of marmalade on top then cover with the remaining mix. Top with a walnut half or a sprinkling of chopped walnuts.

  4. Baked for 20 minutes or so at 180C/Fan 160.

For The Syrup

  1. Dissolve the sugar in the orange juice with the zest over a low heat. Add the marmalafe and stir until dissolved. Simmer for a few minutes until thickened a little. Stir in the Blossom Water.

  2. Serve warm (they are fine cold too) with cream and the syrup poured over.
